Hillsboro Resort is delighted to welcome Chef Jason Rodriguez as the new Executive Chef of its restaurant, King, located on Hillsboro’s private beach along the Millionaire Mile. In his role as executive chef at Roí, Rodriguez focuses on flavor, no matter how simple the dish. He will oversee kitchen operations, cocktail and wine selections, as well as the expansion of the menu, which it has already doubled in size. Chef Jason Rodriquez has dreamed up new menu items to impress new customers and regulars. In creating the new dishes, the chef drew on his diverse background in the kitchen while adhering to Roí’s signature coastal aesthetic.

“Chef Jason is known for putting an innovative spin on traditional dishes, and we’re thrilled he’s bringing his unique cooking style to Roí,” said Ann Durso, General Manager of Hillsboro Beach Resort. “Food and drink is an important part of a customer’s experience and we believe their culinary creations will have an impact.”

A former “chopped” chef Jason Rodriguez has over 15 years of experience as a chef; each position expands and diversifies their culinary expertise. He was professionally trained in French and Asian cuisine and is known for his fusion-style twist on classic dishes. Prior to accepting the position of Executive Chef at Hillsboro Beach Resort, Chef Rodriguez worked at some of New York’s most iconic restaurants, including Bond Street, an upscale Asian restaurant loved by celebrities and alongside celebrity chef World, Jean George. In 2021, he opened his own restaurant, Avalon Steak & Seafood in Delray Beach, Florida.

“In the future, I plan to expand the menu by offering a seafood-based menu at Roí, synonymous with beautiful water views,” Rodriguez explained.

Rodriguez presents a Chef’s Tasting Menu at Hillsboro available Friday through Sunday consisting of a five-course meal. Ahead of the weekend, he will connect with the team to brainstorm five starters, main courses and desserts for guests seeking a fine dining experience at Le Roí.

The new admissions card offers the Buffalo Cauliflower Bites ($13) with a creamy blue cheese dip; the Cajun chicken wings ($15), with the option of bbq, ranch or buffalo style served with a creamy blue cheese sauce and refreshing celery; or the Market salad ($14), a blend of roasted cherry tomatoes, shredded baby carrots, pickled golden beets and a fresh green goddess dressing. Other menu highlights include the Avocado toast ($14), made with mashed avocado and topped with feta and cherry tomatoes with the choice of adding an egg for $2; Where Chicken quesadilla ($15), made with caramelized onions and sweet peppers with a chipotle mayo sauce.

The restaurant also offers a varied menu of perfect sandwiches to satisfy the cravings of all customers. Some options are Blackened Fish Sandwich ($22) a charred and blackened plaice topped with coleslaw and served with homemade pickles; the beach burger ($20), topped with sweet and savory bacon jam, caramelized onion aioli and house pickles; or the breakfast club ($13), served on a brioche bun, this burger is made with a fried egg, crispy bacon, avocado and tomato. For a lighter alternative, customers can also take advantage of the Chicken curry salad wrap ($18), served with cranberries and grilled almonds or Fresh mozzarella ($15), a pesto and roasted pepper sandwich served on ciabatta bread with a slice of soft mozzarella cheese. All sandwiches come with fries or a green salad.

Roí’s new appetizers will be all the rage with a tasty Grilled salmon ($26) served with broccolini, basil whipped potatoes and chilli soy butter; Cheese macaroni ($18), made with cheese cheddar and smoked gouda with chili crumbs on top; or the Bucatins ($24), savory sausage balls coated in a roasted tomato, tomato and basil sauce. Some other dishes include the Chicken & Waffles ($24) with spinach and cheddar waffles with grilled chicken and a sweet and spicy honey chili sauce drizzled; or the fish and chips ($24), the catch of the day served with malt vinegar fries and a lemon and herb tartar sauce for dipping.
